Hold the sharpening steel at arm‘s length in front of you. Then draw the knife blade at an angle of 20° against the steel. Move both sides of the blade 5 to 10 times from bolster to the tip in turns over the full length of the steel. After sharpening, the sharpening steel and the knife should be cleaned under clear water and dried.
